Ingredients:
- Mutton - 500 Gms, cut into small cubes
- Onion, medium sized - 2 Nos, finely sliced
- Water - 1 - 1 ½ cup, adjust
- Ghee - ¼ cup
- Cumin Powder - 1 Teaspoon
- Chopped coriander leaves - 2-3 Tablespoon
- Salt to taste
Whole Spices:
- Cloves - 4 Nos
- Green Cardamom - 4 Nos
- Black Cardamom - 2 Nos
- Cinnamon stick - 1 inch piece
- Bay leaves - 2 Nos
For Red Sauce:
- Yogurt- 1 cup
- Turmeric Powder - ½ Teaspoon
- Coriander Powder - 1 Tablespoon
- Kashmiri Chilli Powder - 3 Tablespoon
- Ginger Garlic Paste - 1 ½ Tablespoon
Instructions:
Initial Preparation:
- Clean and wash the mutton pieces. Drain the water completely and set aside.
- In a bowl, add in the ingredients listed in 'For Red Sauce' and combine well. Set aside.
Curry Preparation:
- Heat ghee in a pan, add in the whole spices and fry for few seconds.
- Then add in the sliced onions and saute until slightly golden in color.
- Now add in the mutton pieces and stir continuously until the mutton pieces are slightly brown on high heat for about 5-6 minutes.
- Pour in the prepared red sauce, combine well and cook for 2-3 minutes on medium heat.
- Then add in the water, salt and mix well.
- Cover and cook till the mutton is tender and the gravy is thick for about 45-60 minutes on low-medium heat. Add more water, if required.(refer Notes)
- Add in the cumin powder, chopped coriander leaves and mix well.
- Remove from heat and serve warm.
Notes:
- To save time, you can pressure cook the curry for 3-4 whistles. Then remove from heat and allow the pressure to be settled down naturally.
- Then open the lid and cook until the gravy is thick on medium-high heat.
