Ingredients:
- Palakkadan Matta Rice(Red rice) - ¾ cup, you can use any rice of your choice
- Milk - 4 ½ cups
- Sugar - 1 - 1 ¼ cup
- Cashew nuts - 10-15 Nos
- Raisins - 5-10 Nos
- Cardamom - ¼ Teaspoon
- Ghee - 1 ½ Tablespoon
- Water - 3 cups
Instructions:
- Wash and thoroughly dry the rice.
- Heat ghee in a heavy bottomed sauce pan, add cashew nuts and raisins and fry till light golden color; Remove from ghee and set aside.
- Then add the rice in the same pan and roast for 2-3 minutes on medium flame or till you get a roasted aroma.
- Once roasted, add in the milk and water and cook under medium heat for 10 minutes. Stir occasionally.
- Then add sugar, roasted nuts and raisins and cook on low flame till the rice is done or till you get the right consistency. Stir frequently.
- Once you get the desired consistency, remove from fire and add cardamom powder; Mix well. Serve hot or warm.
