Ingredients:
For Mango-Mint Syrup:
- Roughly chopped sweet Ripe Mango - 1 ½ cup
- Lemon Juice - 4-6 Tablespoon, freshly squeezed
- Mint - 8-10 leaves, adjust according to your taste
- Sugar - ½ - ¾ cup, adjust according to your taste
- Water - 1 cup
For Serving:
- Ice cubes
- Lemon wedges or Mint Leaves
- Cold water or chilled club soda as required, 4 cups approx:
Instructions:
- Blend together the items listed in 'For Mango-Mint Syrup' until smooth.
- Strain the syrup through a mesh-sieve. Pressing down the mixture using the back of a spoon to extract maximum syrup.
- Refrigerate until ready to serve.
Serving Instructions:
- Add ice cubes in the serving glasses. Fill little more than ⅓ portion of the glass with the mango-mint syrup.
- Pour cold water or club soda into the glasses till it almost reaches the brim.
- Garnish with fresh lime wedges and mint leaves. Serve chilled.
Notes:
- Adjust the quantity of lime juice according to the tanginess.
- Adjust the quantity of mint leaves according to you taste.
- Adjust the quantity of sugar according to your taste. Make sure that the mango-mint syrup is sweeter than you normally like.
- I used almost ½ cup sugar.
