Ingredients:
For Marination:
- Raw mango - 2 Nos(big sized) / 5 cups (diced)
- Kashmiri chilly powder - 2 Tablespoon
- Turmeric powder - ½ Teaspoon
- Salt to taste
For Masala:
- Garlic - 2 Tablespoon, sliced
- Ginger - 2 Tablespoon, julienned
- Green chillies - 3-4, sliced
- Red chilly powder - 2 Tablespoon
- Curry leaves - 1 sprig
- Mustard seeds - 2 Teaspoon
- Fenugreek powder - ¼ Teaspoon
- Asafoetida/Hing - ¼ Teaspoon
- Vinegar - 1 Tablespoon
- Gingelly oil - 4-5 Tablespoon
Instructions:
- In a bowl add diced mangoes, kashmiri chilly powder, turmeric powder and salt; Mix well and set aside for an hour.
- Heat oil in a pan, splutter mustard seeds.
- Then add curry leaves, sliced garlic, julienne ginger and sliced green chillies and saute till the raw smell disappears.
- Now add the red chilly powder, fry for 1 minute over low flame.
- Then add fenugreek powder and asafoetida powder sauté for few seconds over low flame.
- Add the marinated mango pieces. Pour ¼ cup of water. Mix well and cook for 2 minutes.
- Remove from flame, add vinegar; Mix well and allow to cool completely.
