   Happy Diwali   

Ingredients:
  • Cream cheese - 8 oz or 230 Gms, softened
  • Confectioners' sugar - 4 cups, sifted
  • Unsalted butter - ½ cup / 1 stick, softened
  • Vanilla extract - 1 Teaspoon
Instructions:
  1. In a large bowl, add the cream cheese, sugar, butter and mix using an electric mixer on low speed until incorporated.
  2. Then change the speed to high, and mix until light and fluffy, about 5 minutes. Scrape down the sides of the bowl occasionally.
  3. Then add the vanilla, raise the speed to high and mix until fluffy; Don't forget to scrape down occasionally.
  4. Keep it in the refrigerator until little stiff, before using.

Yield: enough to frost a 3 layer cake
