Ingredients:
- All purpose flour - 2 cups
- Grated carrots - 3 cups
- Granulated white sugar - 1 cup
- Brown sugar - 1 cup
- Baking soda - 2 Teaspoon
- Baking powder - 2 Teaspoon
- Eggs - 4 Nos
- Ground cinnamon - 2 Teaspoon
- Ground Nutmeg - ½ Teaspoon
- Chopped Nuts(cashewnuts or almonds) - 1 cup
- Raisins - ½ cup (optional)
- Vegetable oil - 1 ¼ cup
- Salt - ½ Teaspoon
- Vanilla Extract - 2 Teaspoon
Instructions:
- Preheat oven to 325°F. Prepare two 9” pans by lining with wax paper.
- In a large bowl, mix together all-purpose-flour, baking soda, baking powder, cinnamon, nutmeg and salt.
- In another bowl, add eggs, oil, sugars and vanilla; beat on medium speed for 2 minutes or until fluffy.
- Now add the dry flour mix into this and beat for about 2 minutes more.
- Then add the grated carrots, nuts and raisins and mix well using a spoon.
- Pour batter in prepared cake pans and bake for approx. 45 to 50 minutes.
- Cool cake in pan for 5 minutes, then turn out onto a rack.
