Ingredients:
- Rice flakes - 1 cup, refer notes
- Milk - 4 cup
- Sugar - ½ - ¾ cup, adjust
- Cardamom powder - ¼ Teaspoon
- Cashew nuts - 6-10 Nos
- Raisins - 6-8 Nos
- Ghee - 1 Tablespoon
Instructions:
- Heat ghee in a pan, fry cashew nuts until light golden in color on low heat.
- Then add in the raisins and fry until fluffy and transfer it to a bowl.
- Then add the rice flakes in the same pan and fry for 2-3 minutes or until crispy and the color slightly changes. Transfer to a bowl and keep it aside.
- In a sauce pan, add in the milk and let it boil.
- Once boiled, reduce heat to low and cook until the milk is slightly reduced. Stir occasionally.
- Then add in the roasted rice flakes, sugar and combine well.
- Cook until the rice flakes are soft and the kheer is semi-thick. Stir occasionally.
- Once the kheer is ready, add in the cardamom powder, roasted cashews, raisins and mix well.
- Remove from heat and serve warm.
Notes:
- You can use white or red rice flakes. I used thin red rice flakes.
- If you are using thick rice flakes, gently rinse it in color water for 2 times. Drain immediately and set aside.
- Then add it in the milk(step #6), once the milk is slightly reduced. You can skip step #3.
