Ingredients:
- Achinga payar/Long Beans, cut into 1 inch pieces - 2 ½ cup
- Sliced Onion - 1 cup
- Coconut slices - ¼ cup
- Green chillies - 2 nos, slitted
- Curry leaves - 1 sprig
- Kashmiri red chilli powder - ¾ - 1 Tablespoon
- Turmeric powder - ½ Teaspoon
- Coconut oil - 2 Tablespoon
- Water as needed(approx: ½ cup)
- Salt to taste
Instructions:
- In a bowl, add achinga pieces, sliced onion, slitted green chillies, curry leaves, kashmiri red chilli powder, turmeric powder and mix well.
- In a pan, heat one table spoon of coconut oil; Add coconut slices and fry till slightly brown.
- Then add the marinated mix(step #1) and water; Cover and cook on low heat till the water content dries up completely and beans pieces are cooked well. Don't forget to stir occasionally.
- Then add 1 tablespoon coconut oil, mix well and sauté for few seconds. Remove from flame and serve warm.
