Ingredients:
- Cake flour - 1 ¼ cup
- Powdered Sugar - ¾ cup
- Unsalted butter, softened - 6 Tablespoon
- Egg yolks - 2 Nos
- Vanilla Extract - ½ Teaspoon
- Red or Pink food color - few drops
- Salt - one pinch
- Egg white - 1 Nos, beaten
- Sprinkles as required to cover the cookie roll
- Heart shaped cookie cutter
Instructions:
- In a mixing bowl, add in the butter and whisk until creamy. Add in the powdered sugar and mix well.
- Add in the egg yolks, vanilla, salt and whisk until creamy.
- Add in the cake flour and knead using your hands and make a soft dough.
- Divide the dough into two portions(⅓ & ⅔), reserve the ⅓ portion. Add food color in the ⅔ portion and knead it well. Refrigerate both portions for 1 hour.
- Take out the colored dough, sprinkle little powdered sugar on the working surface and roll out into 1 cm(adjust to the thickness of your cookie cutter) thickness sheet.
- Cut and make hearts with the cookie cutter. Slightly apply beaten egg white on one side of each hearts( it acts as a glue between hearts), pile them to make a heart pillar(refer video). Freeze it for 1 hour.
- After one hour, carefully cover the heart cookie pillar with small pieces of white dough(knead well before using) and make a cylinder shaped roll(refer video). Refrigerate it for another 1 hour.
- Then apply the beaten egg all-over the cylinder and roll it in rainbow sprinkles.
- Carefully slice it into cookies and refrigerate it for 30 minutes. Arrange cookies in a wax paper lined cookie tray and bake for 8-11 minutes or until light brown in a 350°F preheated oven.
- Remove from oven, and let it cool in the cookie tray for 5 minutes. Then transfer to a wire rack and let them cool completely.
Notes:
- If you don't have cake flour,
- Take 1 ¼ cups of all-purpose flour, then remove 2 ½ tablespoons of flour from it and substitute with 2 ½ tablespoon of cornflour.
- Sift and continue with the recipe.
Yield : Makes about 14-17 cookies
