   Happy Diwali   

Ingredients:
  • Large Tomatoes - 3 Nos
  • Onion - 1 Nos, medium sized; chopped
  • Crushed garlic - ¾ Teaspoon
  • Kasuri methi - 1 Tablespoon
  • Brown sugar - 1 Teaspoon
  • Cinnamon powder - 1 pinch
  • Nutmeg powder - 1 pinch
  • Pepper powder - ¼ Teaspoon
  • Clove - 1 Nos
  • Water - 2-3 cups
  • Salt to taste
  • Vegetable oil - 1 Tablespoon
Instructions:
  1. Apply some oil on tomatoes and roast over fire, peel the skin; Make a paste and set aside.
  2. Heat oil in a pan add chopped onions, crushed garlic and saute till the onion becomes translucent. Cool and make a fine paste.
  3. Add the onion paste in the same pan; Add the prepared tomato paste into it and saute for a minute .
  4. Then add the kasuri methi, brown sugar, clove, cinnamon powder, pepper powder, nutmeg powder, salt and mix well.
  5. Now add water and cook till the soup thickens slightly.
  6. Remove from flame and serve hot.

Notes:

  • You can use same quantity of jaggery instead of brown sugar.
  • Remove the tomatoes from fire, when it starts cracking the skin and the skin started shrinking all the sides.
