Ingredients:
- Medu Vadai, Uzhunnu vada – 6 to 8 Nos
- Hot water - 2 cups
For Yogurt Mix:
- Greek Yogurt – 1 ½ cups
- Water - ½ cup
- Salt – ½ Teaspoon
- Sugar – ½ Teaspoon
For Tempering:
- Vegetable Oil – 1 Tablespoon
- Mustard Seeds – 1 Teaspoon
- Dry red chillies - 1-2 Nos
- Hing powder – ¼ Teaspoon
- Red Pearl Onions - 2-3 Nos, sliced
- Green chillies - 2-3 Nos, chopped
- Curry leaves – 1 sprig
For Garnishing:
- Red chilli powder to sprinkle on top
- Cumin powder to sprinkle on top
- Chopped Coriander leaves as required
Instructions:
Initial Preparation:
- Follow the Medu Vadai, Uzhunnu Vada(click here) recipe and make the vadas as described.
- Soak the prepared vadas in hot water for 15 minutes. Then take out them from hot water and slightly & gently squeeze to remove the excess water. Set aside.
Thair Vada Preparation:
- Take yogurt, water, sugar, salt into a large dish, and beat well until the yogurt is smooth and creamy. Set aside.
- Heat oil in a pan, and splutter mustard seeds.
- Then add in the dry chillies and fry for 1 minute on low-medium heat.
- Now add in the sliced onion, green chillies, curry leaves and saute until the onions become soft.
- Then add in the hing powder and fry for few seconds on low heat.
- Remove from heat and pour this tempering over the yogurt and mix well.
- Now add in the soaked vadas into this, and make sure that the vadas are well immersed in yogurt mixture.
- Let them soak in yogurt mixture for 30 minutes to 4 hours.
- Just before serving, sprinkle little red chilli powder and cumin powder on top, and add the finely chopped coriander leaves and enjoy.
Notes:
- Dipping in hot water helps the vada to become soft and absorb the yogurt mixture.
- If the curd is too thick, vada won't absorb it. So beating yogurt with water helps the vada to absorb the yogurt mixture.
