Ingredients:
- Onion - 2 large, ( 400-500 Gms ), sliced
- All-purpose flour - 1 cup, heaped
- Gram flour/Besan Flour - ¼ cup
- Baking soda - ¼ Teaspoon
- Turmeric Powder - ½ Teaspoon
- Chilli Powder - 1-2 Teaspoon, adjust
- Asafetida powder - ⅛ Teaspoon
- Fennel Seeds - ¼ Teaspoon
- Garam masala - ¼ Teaspoon
- Finely chopped Ginger - 1 Tablespoon
- Green chillies - 2-3 Nos, finely chopped
- Curry leaves, chopped - 1 sprig
- Water as required
- Salt to taste
- Vegetable Oil as required
Instructions:
- Take the sliced onion, chopped ginger, green chillies, curry leaves in a large bowl and squeeze well using your hands.
- Then add in the all-purpose flour, gram flour, turmeric powder, chilli powder, asafetida powder, garam masala, fennel seeds, baking soda, salt and mix well.
- Add water little by little, combine well and make a thick dough.
- Heat enough oil to fry the fritters in a deep pan. Once the oil is hot, maintain the oil to be in low-medium heat.
- Make small balls out of the dough and carefully place it in hot oil.
- Fry until crispy and golden in color on a low-medium heat. Flip to both sides several times, for even frying.
- Transfer the fritters to a paper towel to remove excess oil.
- Serve hot.
Yield: Makes about 14-16 medium sized fritters.
