Tomato Curry

   Happy Diwali   

Ingredients:
  • Tomato – 4 Nos, medium, finely sliced
  • Chopped Onion – ¾ cup
  • Slitted Green chillies – 3 – 4 Nos
  • Chilly powder – ¾ teaspoon
  • Turmeric powder – ½ teaspoon
  • Curry leaves – 1 sprig
  • Coconut oil - 2 tablespoon
  • Water - 1 - 2 cups, approx
  • Salt to taste
For ground masala
  • Grated coconut – 1 cup
  • Pearl onions – 2 Nos
  • Cumin seeds – 1 pinch
  • Water as required
For garnishing
  • Coconut oil – 1 tablespoon
  • Mustard seeds – ½ teaspoon
  • Dried red chillies – 2 Nos
  • Sliced Pearl onions – 4 Nos
  • Curry leaves – 1 sprig
Instructions:
  1. Grind together the ingredients for ground masala to a fine paste and set aside.
  2. Heat 2 tablespoons of coconut oil in a large pan, add the chopped onion, green chillies and curry leaves, sauté till the onions turns soft.
  3. Add the finely sliced tomatoes and sauté till the tomatoes are mashed well; Add turmeric power, chilli powder and fry till the raw smell disappears.
  4. Then add water, salt and cook for about 10-15 minutes; Add the prepared coconut masala and mix well, cook for another 5 minutes. Remove from flame.
  5. Heat 1 tablespoon coconut oil in a pan, splutter mustard seeds, add dried red chillies and sauté for few seconds.
  6. Then add sliced pearl onions, curry leaves and sauté till the onions turns golden brown.
  7. Pour over to the tomato curry and close it with lid for 5 minutes.
  8. Serve warm.
