Ingredients:
- Tomato – 4 Nos, medium, finely sliced
- Chopped Onion – ¾ cup
- Slitted Green chillies – 3 – 4 Nos
- Chilly powder – ¾ teaspoon
- Turmeric powder – ½ teaspoon
- Curry leaves – 1 sprig
- Coconut oil - 2 tablespoon
- Water - 1 - 2 cups, approx
- Salt to taste
- Grated coconut – 1 cup
- Pearl onions – 2 Nos
- Cumin seeds – 1 pinch
- Water as required
- Coconut oil – 1 tablespoon
- Mustard seeds – ½ teaspoon
- Dried red chillies – 2 Nos
- Sliced Pearl onions – 4 Nos
- Curry leaves – 1 sprig
Instructions:
- Grind together the ingredients for ground masala to a fine paste and set aside.
- Heat 2 tablespoons of coconut oil in a large pan, add the chopped onion, green chillies and curry leaves, sauté till the onions turns soft.
- Add the finely sliced tomatoes and sauté till the tomatoes are mashed well; Add turmeric power, chilli powder and fry till the raw smell disappears.
- Then add water, salt and cook for about 10-15 minutes; Add the prepared coconut masala and mix well, cook for another 5 minutes. Remove from flame.
- Heat 1 tablespoon coconut oil in a pan, splutter mustard seeds, add dried red chillies and sauté for few seconds.
- Then add sliced pearl onions, curry leaves and sauté till the onions turns golden brown.
- Pour over to the tomato curry and close it with lid for 5 minutes.
- Serve warm.
