Steamed Dates and Raisins Cake with Custard Sauce

Ingredients:

For Custard Sauce:

  • Milk - 1 cup
  • Egg white- 1 Nos, beaten
  • Sugar - 1 ½ Tablespoon
  • Cornflour - 1 Teaspoon
  • Salt - 1 pinch
  • Vanilla essence - ¼ Teaspoon

For Cake:

  • All-purpose flour - 1 cup
  • Baking powder - 1 Teaspoon
  • Baking soda - 1 Teaspoon
  • Dates, deseeded - ½ cup, chopped
  • Seedless Raisins - ½ cup, chopped
  • Sugar - 1 Tablespoon
  • Butter - 1 Tablespoon
  • Boiling water - ½ cup
Instructions:

For Custard Sauce:

  1. Boil the milk in a sauce pan. Once boiled, add in the beaten egg white, sugar, cornflour and mix well on medium heat.
  2. Cook until the sauce becomes slightly thick on medium heat. Stir continuously. Remove from heat and let it cool.
  3. Once cooled, add in the vanilla essence, salt and mix well. Set aside.

For Cake:

  1. Mix together the all-purpose flour, baking powder and baking soda in a bowl.
  2. Take the chopped dates, chopped raisins, sugar, butter, boiling water in a big bowl and mix well.
  3. Add in the dry mixture and combine well. Place this into a medium bowl, in which you could steam the cake and level the top.
  4. Place the bowl in the steamer and steam cook on high heat for 50-60 minutes or until a wooden skewer inserted in the center comes out clean.
  5. Remove from heat and let it cool. Then invert and tap the bowl sharply on the plate and serve with custard sauce.
