Ingredients:
- Finely chopped Spinach - 1 cup
- Finely chopped Coriander leaves - ¼ cup
- Boiled, mashed Potatoes - 1 ½ cups
- Finely chopped Onion - ½ of a medium sized Onion
- Finely chopped green chilies - 1-2 Nos
- Ginger paste - 1 Teaspoon
- Garlic paste - 1 Teaspoon
- Turmeric powder - ¼ Teaspoon
- Garam masala - 1 Teaspoon
- Cumin seeds - 1 pinch
- Egg - 1 Nos
- Oil for frying
- Salt as needed
- Bread crumbs as required
- Rice flour - 1 Tablespoon(optional - mix it with bread crumbs)
Instructions:
- Heat 1 tablespoon of oil in a pan, add cumin seeds and allow it to splutter.
- Add turmeric powder and stir for few seconds, then add the chopped onion and saute until the onion become soft.
- Then add garlic paste, ginger paste, chopped green chilies and saute until the raw smell disappears.
- Add in the chopped spinach and coriander leaves and mix well.
- Add in the mashed potato, salt and mix well on low heat for 3 to 4 minutes.
- Then add in the garam masala and mix well. Remove from heat and allow it to cool.
- Then roll the mix into rounds or ovals or log shape.
- Dip each cutlet in beaten egg and then roll in bread crumbs.
- Heat oil in a heavy bottomed pan and deep fry the cutlets until golden brown.
- Transfer to a paper towel and serve hot.
- Wash spinach thoroughly and drain water completely before chopping.
- Adding rice powder make the cutlets more crispy.
