Spinach Cutlet

   Happy Diwali   

Ingredients:
  • Finely chopped Spinach - 1 cup
  • Finely chopped Coriander leaves - ¼ cup
  • Boiled, mashed Potatoes - 1 ½ cups
  • Finely chopped Onion - ½ of a medium sized Onion
  • Finely chopped green chilies - 1-2 Nos
  • Ginger paste - 1 Teaspoon
  • Garlic paste - 1 Teaspoon
  • Turmeric powder - ¼ Teaspoon
  • Garam masala - 1 Teaspoon
  • Cumin seeds - 1 pinch
  • Egg - 1 Nos
  • Oil for frying
  • Salt as needed
  • Bread crumbs as required
  • Rice flour - 1 Tablespoon(optional - mix it with bread crumbs)
Instructions:
  1. Heat 1 tablespoon of oil in a pan, add cumin seeds and allow it to splutter.
  2. Add turmeric powder and stir for few seconds, then add the chopped onion and saute until the onion become soft.
  3. Then add garlic paste, ginger paste, chopped green chilies and saute until the raw smell disappears.
  4. Add in the chopped spinach and coriander leaves and mix well.
  5. Add in the mashed potato, salt and mix well on low heat for 3 to 4 minutes.
  6. Then add in the garam masala and mix well. Remove from heat and allow it to cool.
  7. Then roll the mix into rounds or ovals or log shape.
  8. Dip each cutlet in beaten egg and then roll in bread crumbs.
  9. Heat oil in a heavy bottomed pan and deep fry the cutlets until golden brown.
  10. Transfer to a paper towel and serve hot.
Notes:
  1. Wash spinach thoroughly and drain water completely before chopping.
  2. Adding rice powder make the cutlets more crispy.
