   Happy Diwali   

Ingredients:
  • All-purpose flour - 2 cup
  • Cumin seeds - 1 Teaspoon
  • Red chilli powder - 1 ½ - 2 ½ Teaspoon
  • Cardamom powder - ¼ Teaspoon
  • Asafoetida powder - ½ Teaspoon
  • Finely chopped garlic - 2 Teaspoon
  • Butter - 2 Tablespoon
  • Salt - 1 ½ - 2 Teaspoon
  • Oil for deep frying
  • Water for kneading
Instructions:

Intial Preparation:

  1. In a bowl, add in the flour, cumin seeds, chilli powder, cardamom powder, asafoetida, chopped garlic, butter, salt and mix well.
  2. Add enough water little by little into this and knead it to a soft pliable dough. It should not be too soft or too firm.
  3. Cover it with a damp cloth and let it sit for about 30 minutes.

Diamond Cuts Preparation:

  1. Heat oil in a heavy bottomed deep pan.
  2. Divide the dough into small lemon sized balls. Sprinkle little flour on the working surface.
  3. Roll each ball to very thin circles. Cut it into strips using a sharp knife. Then cut it diagonally to make diamond shapes.
  4. Place the diamond cuts into the hot oil as batches. Do not overcrowd.
  5. Fry until golden brown on low heat. Flip to both sides to ensure proper and even frying.
  6. Transfer to a kitchen towel and let it cool.
  7. Once cooled, store it in an airtight container and use as needed. You can keep this for 1-2 weeks in room temperature.

Yield: Makes approx: 4 cups of diamond cuts
