Ingredients:
- All purpose flour - 1 ¾ cups + 1 Tablespoon
- Unsalted butter, softened - ¾ cup, or 1 ½ stick
- Granulated Sugar - 1 cup
- Baking powder - 1 ½ Teaspoon
- Salt - ½ Teaspoon
- Vanilla extract - 1 ½ Teaspoon
- Eggs - 1 Nos, large
- Egg yolk - 1 Nos
- Milk - ¾ cup
- Tutti-Frutti - ¾ - 1 cup, to mix in the batter
- Tutti-Frutti - 2 Tablespoon, to spread on top
Instructions:
- Preheat oven to 375°F.
- Take ¾ - 1 cup of tutti-frutti and 1 tablespoon of all-purpose flour in a bowl and mix well. Set aside.
- Butter a 9X5 loaf cake pan, then slightly dust with flour or arrange parchment paper in the bottom.
- Sift together 1 ¾ cups of flour, baking powder, salt and set aside.
- In a large mixing bowl, add in the butter, sugar and beat until creamy for about 5 minutes.
- Add in the egg, egg yolk, vanilla essence and beat for 1 minute after each addition.
- Add in the flour mixture and milk alternately into this and beat at low speed till smooth and fluffy.
- Add in the flour coated tutti-frutti into the batter and gently fold it into the batter.
- Pour batter into the prepared cake pan, spread 2 tablespoons of tutti-frutti over the batter.
- Bake for about 30 minutes, then place an aluminium foil on top of the pan to prevent browning the top.
- Again bake for about 25 - 30 minutes or until golden brown or a wooden pick inserted in center comes out clean. Baking time may vary according to the oven model.
- Remove from oven, cool cake in the pan for 10 minutes, then transfer to a wire rack and cool completely.
- Serving Suggestions : Once the cake is completely cooled, transfer the cake to an air-tight container and serve after 1-2 days.
