Ingredients:
- Falooda sev/ Rice or Corn Vermicelli – ¼ cup, 25 Gms
- Chia seeds/ Basil seeds – 2 Tablespoon
- Strawberry jelly – 4 Tablespoon, refer notes
- Strawberry syrup - 3-4 Tablespoon
- Pistachios, chopped - 1 Tablespoon
- Almonds, chopped - 1 Tablespoon
- Cashew nuts, chopped - 1 Tablespoon
- Vanilla Ice cream - 2 scoops
- Chopped Fresh fruits as required
- Candied Cherries to garnish
For Rose Milk:
- Milk - 1 cup
- Rose essence - 1 Teaspoon
- Sugar - 1-2 Tablespoon
Instructions:
Initial Preparation:
- Make strawberry jelly as per the instructions in the package(Refer Notes). Once the jelly is set, cut it into small pieces.
- Boil milk in a sauce pan, add 1-2 tablespoons of sugar and mix well. Remove from heat and let it cool.
- Once cooled, strain the milk to a bowl; Add in the rose essence, chopped fresh fruits and mix well. Refrigerate until chilled.
- Soak the basil seeds in ¾ cup of lukewarm water for 15-20 minutes. Set aside.
- Cook the falooda sev in enough water for 3-6 minutes or until cooked, strain and set aside.
Assembling Falooda:
- Take 2 large falooda glasses, pour 1 ½ tablespoon of strawberry syrup in each glass as the first layer.
- Over that add in the basil seeds, cooked falooda sev, strawberry jelly, chopped nuts as layers.
- Pour 1 tablespoon of strawberry syrup on top. Then divide chilled rose milk among the glasses.
- Now top it with a scoop of vanilla ice-cream. Garnish with chopped nuts and cherry on top.
- Serve immediately and enjoy :)
Notes:
- I used banana, apple and grapes as fresh fruits.
Jelly Preparation Notes:
- Take 1 cup of boiling water in a bowl, add in the jelly powder(1 packet, 85 gms).
- Mix well until completely dissolved.
- Add a cup of chilled water and mix well.
- Refrigerate for 3-4 hours or until firm.
