Ingredients:
- Thick Flattened Rice Flakes / Poha / Aval - 2 cups
- Onion, medium sized - 1 Nos, sliced
- Potato, small sized - 1 Nos, cut into small cubes
- Fresh Green Peas - ¼ cup
- Green chillies - 2 Nos, chopped
- Chopped Coriander leaves - 2 Tablespoon
- Curry leaves - 1-2 sprigs
- Peanuts - ¼ cup
- Turmeric powder - ¾ Teaspoon
- Asafoetida Powder - ⅛ Teaspoon
- Lemon juice - 1 Teaspoon
- Grated Coconut - 2-3 Tablespoon, optional
- Mustard Seeds - 1 Teaspoon
- Cumin seeds - ¾ Teaspoon
- Sugar - ½ Teaspoon
- Vegetable oil - 2 Tablespoon
- Salt to taste
- Water as required
Instructions:
- Soak the rice flakes in water for 2 minutes, then strain it to a colander and discard the water.
- Add sugar, ½ teaspoon salt into the rice flakes and mix well. Set aside.
- Heat oil in a large wide pan, add in the peanuts and fry until lightly golden in color. Transfer to a bowl and set aside.
- Now add in the mustard seeds, cumin seeds and splutter mustard seeds.
- Then add in the asafoetida powder and fry for few seconds on low-medium heat.
- Now add in the sliced onion, chopped green chillies, curry leaves and saute until the onions turn translucent.
- Then add in the potato cubes, green peas and saute for 2-3 minutes.
- Now add ½ - ¾ cup of water, a pinch of salt and mix well.
- Cover and cook until the potatoes are soft on low heat.
- Once the potatoes are soft, cook on medium-high heat until the water evaporates completely.
- Now add in the turmeric powder and saute until the raw smell disappears on low heat.
- Then add in the prepared rice flakes, roasted peanuts and mix well. Adjust salt at this stage.
- Cover and cook for 5 minutes on low heat.
- Then add in the grated coconut, lemon juice, coriander leaves and mix well.
- Switch off the flame, cover the pan for 5 minutes.
- Serve warm.
