Ingredients:
- Boneless Chicken - 300-400 Gms
- Black Pepper powder, as required
- Salt to taste
- Olive oil - 2-3 Tablespoon
For Garlic-Balsamic Dressing:
- Rice wine Vinegar - 1 Tablespoon
- Balsamic Vinegar - ¼ cup
- Olive Oil - 1 Tablespoon
- Minced Garlic - 1 Teaspoon
- Finely chopped fresh Basil Leaves - 1 Tablespoon
- Brown sugar - 1 Tablespoon
- Salt - ¼ Teaspoon
For Salad:
- Cooked Chickpeas - 1 cup
- Cooked Quinoa - 1 cup
- Fully Ripe Avocado - 1 , sliced
- Lettuce Leaves, sliced - 3 cups
- Fresh Basil leaves - ½ cup
- Mozzarella Cheese, cubed - ½ cup
- Cherry tomatoes, halved - 1 cup
- Olives, sliced - optional
Instructions:
Initial Preparation:
- Mix together the ingredients mentioned in 'For Garlic-Balsamic Dressing' in a bowl.
- Take the chicken thighs, 2 tablespoons of the prepared balsamic dressing, black pepper powder, salt in a large bowl.
- Mix well and set aside for 20 minutes. Keep aside the remaining balsamic dressing.
Salad Preparation:
- Heat 2-3 tablespoons of olive oil in a pan.
- Add in the chicken pieces along with the marinade.
- Cook on each side until cooked through on low-medium heat. Remove the chicken pieces from pan and cut into strips.
- Add the chicken strips and the ingredients mentioned in 'For salad' in a large salad bowl.
- Add in the remaining salad dressing, season with black pepper powder and salt.
- Toss to combine and serve immediately.
