Ingredients:
- Potato, medium sized - 2 Nos, cut into 1 inch strips
- Onion, small sized - 1 Nos, thinly sliced
- Geen Chilly - 1 Nos, slit
- Turmeric Powder - ¼ Teaspoon
- Red chilli powder - ¾ - 1 Teaspoon, adjust according to your taste
- Garam Masala - ⅛ Teaspoon
- Curry leaves - 1 sprig
- Coconut oil - 2 Tablespoon
- Salt to taste
Instructions:
- In a bowl, mix together the potato strips, sliced onion, green chilli, curry leaves, turmeric powder, red chilli powder, garam masala and salt.
- Heat 1 tablespoon of coconut oil in a heavy bottomed wide pan, add in the prepared potato mixture and mix well.
- Cover and cook until the potato pieces are cooked well on low heat.
- Then add in 1 tablespoon of coconut oil and fry for about 3-5 minutes or until the potato pieces are slightly roasted on low heat. Stir occasionally.
- Remove from heat and serve hot.
