Ingredients:
- Medium sized Potato - 2 Nos, cooked and mashed
- Chopped Onion - 1 cup
- Chopped Tomato - ¼ cup
- Finely Chopped garlic - 1 Tablespoon
- Finely Chopped Ginger - ½ Teaspoon
- Green Chillies - 1-2 Nos, finely chopped
- Curry leaves - 1 sprig
- Chopped Coriander Leaves - 1-2 Tablespoon
- Turmeric powder - ¼ Teaspoon
- Kashmiri chilli powder - ½ Teaspoon
- Crushed Fennel seeds - ⅛ Teaspoon
- Mustard seeds - ¼ Teaspoon
- Coconut oil - 2 Tablespoon
- Water as required
- Salt to taste
Instructions:
- Heat oil in a pan, splutter mustard seeds; Add chopped onion, green chillies, curry leaves and sauté till the onions are translucent.
- Then add the chopped ginger and garlic and sauté till the raw smell disappears.
- Add chopped tomato and sauté till mashed well. Then add the turmeric powder, chilli powder, crushed fennel seeds; Mix well and fry for few seconds.
- Now add the mashed potatoes, chopped coriander leaves, water, salt and mix well; Cook and stir till the masala becomes thick. (Note : Add water little by little till you get the required consistency.)
- Serve hot with poori :)
