Ingredients:
- Pineapple - 1 Kg
- Orange- 1 Kg
- Cloves - 6-8 Nos
- Cinnamon, 1 inch piece - 5-6 Nos
- Sugar - 1 ½ cup
- Water - 2 cup
Instructions:
Initial Preparation:
- Remove the skin and eyes of pineapple. Then finely chop and set aside.
- Peel the oranges. Remove the white membrane or skin of each cloves. If the oranges are seeded, be sure to remove those as well. Then cut into small pieces and set aside.
Cooking Pineapple:
- In a sauce pan, add in the pineapple pieces, ½ cup sugar, cloves, cinnamon and water. Mix well and cook until the pineapple is well cooked on low-medium heat. Remove from heat and let it cool completely.
- When it is cooled, mash well the cooked pineapple mixture using a muddler and pour into a clean muslin or cheese cloth kept over a bowl.
- Squeeze well the pieapple pulp, collect all the juice and discard the residue.
Jam Preparation:
- Pour the pineapple juice into a heavy bottomed deep wide pan.
- Add in the orange pieces, remaining 1 cup of sugar and mix well.
- Cook until the mixture begins to get thick on medium heat by stirring periodically.
- Once the jam begins to thick, lower the heat and stir continuously until the mixture turns to jam consistency.
- Remove from heat and let it cool slightly. Transfer to a glass jar and use as needed.
Tips :
- To know the consistency of the jam, pour a drop of jam into a steel plate/glass.If it forms into a small pearl without any spreading, then its time to switch off the stove.
