Ingredients:
- All-Purpose Flour, Maida – 1 ¾ cup
- Semolina – ¼ cup
- Yogurt – ½ cup
- Baking Powder – 1 ½ Teaspoon
- Sugar – 2 Teaspoon
- Salt to taste, approx: ½ Teaspoon
- Vegetable Oil – 2 Tablespoon
- Warm Water to knead, approx: 3-4 Tablespoon
- Vegetable Oil, for frying
Instructions:
Bhatura Dough Making:
- Take the flour, semolina, baking powder, oil, sugar and salt in a mixing bowl, and combine well.
- Then add in the yogurt and mix well.
- Add in the warm water little by little and knead until the dough is smooth, for about 10 minutes using your hands.
- Spread little oil on top of the dough and cover it with a damp cloth.
- Set aside in a warm place for 2-3 hours.
- Then divide the dough into 6-8 equal portions and make into balls.
- Roll out each portion into round or oval shape in medium thickness.
Frying Bhatura:
- Heat oil in a heavy bottomed pan. The oil should be moderately hot. NOTE: Drop a piece of dough into the hot oil, it should puff up quickly. Maintain medium to medium-high heat while frying.
- Drop a rolled bhatura into the hot oil carefully and gently press with a slotted spoon, until it starts to puff.
- Once it starts to puff, gently press and rotate the bhatura till it puff completely.
- Deep fry till both sides are slightly golden brown in color. Splashing hot oil over the bhatura several times helps to maintain the shape and crispiness.
- Then transfer the bhatura on to the kitchen tissue paper to remove the excess oil.
- Continue to fry each bhatura this way.
- Serve hot with Chole masala.
