Ingredients:
- All purpose flour - ¾ cup
- Baking soda - ¼ Teaspoon
- Cream of tarter - ½ Teaspoon
- Salt - ⅛ Teaspoon
- Butter, softened - ¼ cup
- Granulated sugar - 6 Tablespoon
- Egg white - 1 large
- Peppermint extract - ¼ Teaspoon
- Crushed hard peppermint candies or canes - ⅛ cup
- White chocolate chips - ⅛ cup
For Sugar-Peppermint mix:
- Hard peppermint candies or canes, crushed - ⅛ cup
- Powdered sugar - ⅛ cup
Instructions:
- Preheat oven to 350°F.
- Mix together the ingredients mentioned in 'For Sugar-Peppermint mix', set aside.
- In a bowl, combine together the flour, baking soda, cream of tartar and salt. Set aside.
- Add sugar and butter in a mixing bowl. Beat until creamy for about 2-3 minutes.
- Add in the peppermint extract and egg white. Beat until creamy for about 2-3 minutes.
- Now add in the flour mixture and combine well.
- Fold in the crushed peppermint and white chocolate chips.
- Divide the dough into 12 equal sized balls, roll each ball into the prepared 'Sugar-Peppermint' mixture.
- Arrange the dough balls on a baking sheet lined with parchment paper.
- Bake for about 10-12 minutes. Then remove from oven and cool on baking sheet for 5 minutes.
- Transfer to wire-rack and cool completely. Enjoy :)
Yield: Makes about 12 medium sized cookies.
