   Happy Diwali   

Ingredients:
  • Bitter gourd / Pavakka - 1 big, finely chopped
  • Onion(medium sized) - 1 Nos, finely chopped
  • Green Chilli - 1 Nos, finely chopped
  • Grated Coconut - 1 cup
  • Coconut Oil - 1 ½ Tablespoon
  • Curry leaves - 1 spring
  • Salt to taste
  • Water as required
Instructions:
  1. In a bowl, mix together the grated coconut, chopped bitter gourd, onion, green chilli and curry leaves.
  2. Heat ½ tablespoon of coconut oil in a pan on low-medium flame, put the mixture into the pan.
  3. Add salt and sprinkle little water over the mixture and combine well. Cover and cook for 3-4 minutes.
  4. Remove the lid and stir the mix. Cook until the water content evaporates completely. Stir occasionally.
  5. Then pour one tablespoon of coconut oil, mix well. Switch off the flame and keep it closed for 5 minutes.
  6. Serve hot.

Tips :

The more coconut you add, the more tasty it is.
