Ingredients:
- Toor Dal/Thuvara paruppu/Sambar parippu/Pigeon Pea – 2 cups
- Shallots – 8 Nos, finely chopped
- Finely chopped Ginger – 1 Tablespoon
- Crushed Dry red chillies – 1 ½ - 2 Tablespoons
- Hing / Asafoetida – ¼ Teaspoon
- Curry leaves – 1 sprig
- Salt to taste
- Oil to deep fry
Instructions:
- Wash the dal and soak for at-least 4 hours. Drain the water completely.
- Keep aside 2 – 3 tablespoons of soaked dal and coarsely grind the remaining dal in a mixer or food processor without adding water.
- In a large bowl, mix together the grinded dal, reserved dal(that had been kept aside), chopped shallots, ginger, crushed dry red chillies, hing, salt and curry leaves.
- Make small lemon sized balls from this mixture and slightly flatten them with your palms.
- Heat oil in a pan. Once the oil is hot, reduce heat to low-medium.
- Place the prepared patties into the hot oil, deep fry until golden brown on both sides over low-medium flame.
- Serve hot.
Yield : Makes about 20 – 25 vadas
