   Happy Diwali   

Ingredients:
  • Toor Dal/Thuvara paruppu/Sambar parippu/Pigeon Pea – 2 cups
  • Shallots – 8 Nos, finely chopped
  • Finely chopped Ginger – 1 Tablespoon
  • Crushed Dry red chillies – 1 ½ - 2 Tablespoons
  • Hing / Asafoetida – ¼ Teaspoon
  • Curry leaves – 1 sprig
  • Salt to taste
  • Oil to deep fry
Instructions:
  1. Wash the dal and soak for at-least 4 hours. Drain the water completely.
  2. Keep aside 2 – 3 tablespoons of soaked dal and coarsely grind the remaining dal in a mixer or food processor without adding water.
  3. In a large bowl, mix together the grinded dal, reserved dal(that had been kept aside), chopped shallots, ginger, crushed dry red chillies, hing, salt and curry leaves.
  4. Make small lemon sized balls from this mixture and slightly flatten them with your palms.
  5. Heat oil in a pan. Once the oil is hot, reduce heat to low-medium.
  6. Place the prepared patties into the hot oil, deep fry until golden brown on both sides over low-medium flame.
  7. Serve hot.
  8. Yield : Makes about 20 – 25 vadas
