   Happy Diwali   

Ingredients:

For Marination:

  • Paneer - 200 Gms, diced
  • Curd - 1 Tablespoon
  • Lemon juice - 1 Teaspoon
  • Ginger-garlic paste - 1 Tablespoon
  • Red food color (optional) -1 pinch

For Masala:

  • Cardamom - 1 Nos
  • Clove- 1 Nos
  • Cinnamon - 1 small piece
  • Ginger-garlic paste - 1 Tablespoon
  • Onion, medium sized - 1 Nos, chopped
  • Tomato, large sized - 3 Nos, chopped
  • Cashew Nuts - 6-8 Nos
  • Kashmiri Chilli Powder - ½ Tablespoon
  • Turemeric Powder - ¼ Teaspoon
  • Garam masala - ½ Teaspoon
  • Kasuri Methi - ½ Teaspoon
  • Fresh Cream - 4 Tablespoon
  • Red food color (optional) -1 pinch
  • Butter - 2 Table spoon + 3 Table spoon
  • Water - ½ cup + ½ cup
  • Salt to taste
Instructions:

Marination and Frying Paneer:

  1. In a bowl, add the ingredients mentioned under 'For Marination'; Mix well and set aside for 30 minutes.
  2. Heat 2 tablespoon of butter in a pan, fry the paneer till it gets a light golden brown color. Take if from oil and keep aside.

Paneer masala Preparation:

  1. Heat 3 tablespoon of butter in a pan, add cardamom, clove, cinnamon, cashew nuts, chopped onion, 1 tablespoon of ginger-garlic paste. Sauté till the onions are translucent.
  2. Add in the chopped tomato and sauté till the tomatoes are mashed well. Then add the turmeric powder, chilli powder, garam masala into this and fry for a minute on low flame.
  3. Remove from heat, and let it cool. When its cooled, transfer into the grinder jar of a mixer grinder; Add ½ cup of water and grind to a fine paste. Strain the mixture, if you need a fine puree.
  4. Add the prepared paste(#3), ½ cup of water, one pinch of red color in a pan; Mix well and allow to boil; When it starts boiling, add in the fried paneer cubes and crushed kasuri methi, cook until the curry becomes thick.
  5. Then add the fresh cream and cook for 15-20 seconds. Remove from flame and serve hot.
