Ingredients:
- Red Cow Peas or Black eyed Beans - 100 Gms
- Ash gourd or Winter Melon - 200 Gms
- Green chillies - 2 Nos, slit
- Thick Coconut milk - ¼ - ¾ cup, adjust according to your taste
- Curry leaves - 1 sprig
- Coconut oil - 1 Tablespoon
- Water as required
- Salt to taste
Instructions:
- Clean and soak the Red Cow Peas or black-eyed beans for 6-8 hours.
- Peel the ash-gourd and remove the seeds. Wash well and chop into small cubes.
- In a pressure cooker, add in the cow peas, 1 ½ cup water, little salt and cook for 2-3 whistles or until cooked well. The beans should not loose their shape, do not over cook.
- Strain the stock into a bowl and keep aside the cooked beans and stock separately.
- In a pan, add in the stock, ash-gourd pieces, green chillies, salt and cook until ash-gourd pieces becomes tender. Add more water, if required. Do not over cook, the melon pieces should be in shape.
- Once the ash-gourd pieces are soft, add in the cooked cow peas, coconut milk, curry leaves and cook for 2-3 mins on low heat.
- Remove from heat. Pour coconut oil over the curry.
- Serve hot with rice.
