Ingredients:
- Mushroom - 250 Gms
- Onion, medium sized - 2 Nos, chopped or sliced
- Chopped Ginger - 1 ½ Teaspoon
- Chopped Garlic - 2 Teaspoon
- Tomato, large sized - 1 Nos, chopped
- Finley chopped Capsicum - 2 Tablespoon, optional
- Kashmiri Red chilli powder- 1 ½ Teaspoon
- Turmeric Powder - ¼ Teaspoon
- Garam masala - ¾ Teaspoon
- Curry leaves- 1 sprig
- Chopped Coriander leaves - 1 Tablespoon
- Coconut Oil - 2 Tablespoon
- Salt to taste
Instructions:
- Clean and cut the mushrooms into small pieces.
- Heat oil in a pan, add in the chopped onions, curry leaves and saute until light brown.
- Add in the ginger, garlic and saute for 2-3 minutes on low heat.
- Now add in the chopped tomatoes and saute until the tomatoes are mashed well. Add in the chopped capsicum at this stage, if using.
- Add in the turmeric powder, chilli powder, garam masala and saute for a minute or two on low-medium heat.
- Add the mushroom pieces, salt and stir for 1-2 minutes on medium heat. Cover and cook for 6-8 minutes or till the mushroom is cooked well on medium heat. No need to add water as water will ooze out of mushroom.
- Open the lid, saute until the water content evaporates completely on low heat.
- Add chopped coriander leaves and give a stir.
- Remove from heat and serve hot.
