Ingredients:
- White button Mushrooms - 400-450 Gms
For the batter:
- All-purpose flour - ¾ cup
- Corn flour - 3 Tablespoon
- Ginger-garlic paste - 2 Teaspoon
- Pepper powder - ½ Teaspoon
- Soy Sauce - 1 Teaspoon
- Sugar - 1 Teaspoon
- Water - ¾ cup approx:, adjust
- Salt - ½ Teaspoon, adjust
For Manchurian Sauce:
- Finely chopped Garlic - 1 ½ Tablespoon
- Onion, medium sized - 1 Nos, finely chopped
- Capsicum, chopped - ¼ cup
- Chopped spring onion whites - 1 Tablespoon
- Chopped spring onion greens - 1 Tablespoon
- Sweet Red Chilli sauce - 2 Tablespoon
- Soy sauce - 1 Tablespoon
- Tomato Ketchup - 1 Tablespoon
- Vinegar - 1 Teaspoon
- Sugar - ½ Teaspoon
- Vegetable Oil - 2 Tablespoon
- Salt to to taste
For Corn Starch water:
- Corn Starch - 1 Tablespoon
- Water - ¾ - 1 cup of water, approx:
Instructions:
Initial Preparation:
- Clean and wash the mushrooms well. Drain the water completely. Cut each mushroom into 2 or 4 pieces.
- Heat enough oil to deep fry the mushroom pieces in a heavy bottomed deep pan.
- Mix together the ingredients listed under 'For the batter' in a bowl, and make a medium thick batter.
- Dip the mushroom pieces one at a time into the batter and slowly drop it into the hot oil. Fry the mushrooms in small batches. Do not overcrowd.
- Deep fry until golden brown. Take them out and transfer to a paper towel.
Mushroom Manchurian Preparation:
- Mix 1 tablespoon of corn starch in ½ - 1 cup of water and set aside.
- Heat 2 tablespoons of oil in a heavy bottomed pan, add in the sliced garlic, chopped spring onion whites and saute for 2 minutes.
- Add in the chopped onion and saute until translucent.
- Then add in the chopped capsicum and saute for 1 minute.
- Add in the sweet red chilli sauce, soy sauce and saute for a minute on high heat.
- Lower the heat, add in tomato ketchup, vinegar, sugar, salt and the corn starch mix. Adjust water. Mix well and let it boil on low heat.
- Now add in the fried mushrooms and mix well.
- Garnish with spring onion greens and serve hot.
