Ingredients:
For cooking rice:
- Long grain Basmathi rice - 2 ½ cups
- Lime juice - 1 Tablespoon
- Ghee - 1 Teaspoon
- Salt to taste
Vegetables used:
- White button mushrooms, thinly sliced - 200-250 Gms
- Onion, thinly sliced - ¾ cup
- Carrots, thinly sliced - ¼ cup
- Green Beans, diagonally sliced - ¼ cup
- Red Bell pepper, chopped - ¼ cup
- Cabbage, finely sliced - ¼ cup
- Fresh or frozen green peas - ¼ cup
- Sweet baby corns - ¼ cup
For Fried rice:
- Ginger- Garlic paste - 1 ½ Tablespoon
- Dark Soy sauce - ¾ - 1 Tablespoon
- Pepper powder - 1 ½ - 1 ¾ Teaspoon, adjust to your taste
- Sugar - 1 Teaspoon
- Vegetable Oil - 2 ½ Tablespoon
- Salt to taste
For Garnishing:
- Spring onion greens - 2 Tablespoon
Instructions:
Initial Preparation:
- Wash rice thoroughly and soak for 15 minutes. Drain the water completely and set aside.
- Boil enough water to cook the rice in a big pot. Add in lime juice, salt and ghee.
- Once it starts boiling, add in the soaked rice and cook until the rice is 85%-90% cooked. Do not over cook.
- Drain off the rice to a colander and allow to cool completely.
Mushroom Fried Rice Preparation:
- Heat oil in a big pan, add in the ginger-garlic paste and saute until the raw smell disappears for about 2-3 minutes on low heat.
- Add in the sliced onion and saute until the onions become translucent.
- Then add in the sliced mushrooms, cabbage, carrots, green beans and saute for 2-3 minutes.
- Then add in 1 teaspoon of pepper powder and salt. Mix well, cover and cook for 4-5 minutes or until the mushrooms are tender and lightly browned on low-medium heat. Stir occasionally.
- Open the lid and cook until water content evaporates completely. Stir occasionally.
- Now add in the green peas, sweet corns and saute for 2-3 minutes.
- Then add in the chopped bell peppers and saute for 1 minute. Then add in the sugar and saute for another 1 minute.
- Add in the soy sauce and mix well.
- Add in the cooked rice, remaining pepper powder and salt. Mix well and fry for 2 minutes on high heat by stirring continuously.
- Garnish with chopped spring onion, and serve hot with Mushroom manchurian or Gobi manchurian or Chilli fish or Chilli chicken on side. .

- Then add in the chopped bell peppers and saute for 1 minute. Then add in the sugar and saute for another 1 minute.
- Add in the soy sauce and mix well.
- Add in the cooked rice, remaining pepper powder and salt. Mix well and fry for 2 minutes on high heat by stirring continuously.
- Garnish with chopped spring onion, and serve hot with Mushroom manchurian or Gobi manchurian or Chilli fish or Chilli chicken on side.
