Ingredients:
- Drumstick leaves - 3 cups
- Eggs - 2 Nos
- Grated Coconut - ½ cup
- Garlic - 1 medium clove, crushed
- Turmeric powder - ¼ Teaspoon
- Black Pepper powder - ¼ Teaspoon + ¼ Teaspoon
- Mustard seeds - ½ Teaspoon
- Curry leaves - 1 sprig
- Coconut Oil - 2 Tablespoon
- Salt to taste
Instructions:
Initial preparation:
- Separate the leaves from stalks, discard the yellow and dried leaves.
- Clean and wash the leaves thoroughly, drain the water completely and set aside.
- Beat eggs in a bowl with ¼ teaspoon of black pepper powder and ⅛ teaspoon of salt and set aside.
Thoran Preparation:
- Heat 1 tablespoon of oil in a large pan, splutter mustard seeds.
- Add in the drumstick leaves and saute for 2-3 minutes on medium heat.
- Then add ¼ teaspoon of black pepper powder and saute until the drumstick leaves turn dark green in color on medium heat.
- Move the the cooked leaves to the side of the pan and add 1 tablespoon of coconut oil into the other side of the pan.
- Then pour in the beaten egg mixture and scramble it quickly, for about 1-2 minutes on medium heat.
- Once the eggs are well scrambled, mix it with the leaves.
- Then add in the grated coconut, chopped garlic, curry leaves, turmeric powder, enough salt and mix well.
- Bring everything to the center of the pan and pat down the mixture slightly using the back of a spoon. Cover and cook for 2 minutes on very low heat.
- Stir occasionally to make sure that the bottom is not getting burned. Adjust salt, if required.
- Remove from heat, and let it sit for about 5 minutes. Serve hot with rice.
