Mulaku Bajji, Chilli Bajji, Banana Pepper Fritters
Ingredients:
  • Sweet Banana Peppers , Bajji Mulaku - 10 Nos
  • Vegetable oil, as required

For the Batter:

  • Besan Flour, Chickpea Flour - 1 cup
  • Rice Flour - 2 Tablespoon
  • Baking Soda - ¼ Teaspoon
  • Red chilli Powder - 1 Teaspoon, adjust
  • Kashmiri Chilli Powder - 1 Teaspoon
  • Turmeric Powder - ½ Teaspoon
  • Asafoetida/Hing Powder - ⅛ Teaspoon
  • Water - ½ - ¾ cup, adjust
  • Salt to taste

For Coconut-Mint-Coriander Chutney:

  • Grated Coconut - ½ - ¾ cup
  • Red Pearl Onion - 1 Nos
  • Green chilli - 1 Nos
  • Ginger - 1 small piece
  • Mint leaves - 4-5 leaves
  • Coriander leaves - 5-6 sprig
  • Salt to taste
  • Water as required
Instructions:

Initial Preparation:

  1. Clean and wash the peppers. Then pat dry them with kitchen paper towel.
  2. Make a slit lengthwise on either sides of the pepper by leaving both edges uncut. Remove the seeds, if the peppers are hot. Set aside.
  3. In a large bowl, mix together the ingredients mentioned in 'For the batter' and make a thick batter. Make sure to add the water little by little and mix well after each addition, until you get the desired consistency. Set aside.
  4. Take the ingredients mentioned in 'For Coconut-Mint-Coriander Chutney' into the small jar of a mixer grinder. Grind together and make a thick chutney. Set aside.

Mulaku Bajji Preparation:

  1. Heat oil in a heavy bottomed deep pan over high heat. Once the oil becomes hot, reduce heat to medium.
  2. Now dip each pepper into the batter and coat well.
  3. Drop the peppers carefully into the hot oil as batches, and fry both sides until crisp and golden brown.
  4. Drain and transfer to kitchen paper towels, to remove excess oil.
  5. Serve hot with the prepared 'Coconut-Mint-Coriander' chutney and enjoy.
