Ingredients:
- Full fat Milk - 1 litre, approx: 4 ½ cups
- Milk Powder or Horlicks(Traditional flavor) - 2 Tablespoons
- Fresh cream - ½ cup
- Cardamom powder - ¼ Teaspoon
- Finely chopped almonds, pistachios - 2 - 3 Tablespoons
For Sugar - Pistachios - Almonds powder:
- Granulated Sugar- ½ cup, adjust according to your taste
- Almonds - 5-6 Nos
- Pistachios - 3-4 Nos
Instructions:
- Grind together the ingredients mentioned in 'For Sugar - Pista - Almond powder' and make a fine powder. Set aside.
- Boil the milk in a heavy bottomed pan, till it is reduced to ⅓ of the quantity on low-medium heat. It wil take approx: 35-40 minutes. Stir occasionally.
- Now add in the prepared Sugar - Pista - Almond powder and mix well.
- Then add in the milk powder or horlicks and mix well.
- Remove from heat, add in the fresh cream and mix until everything is incorporated well. Let it cool completely. Strain if desired.
- Add in the cardamom powder, chopped almonds, pistachios and mix well.
- Pour the mixture into kulfi molds, insert Popsicle sticks or cover it with lid. Freeze for about 4-6 hours or until firm.
Unmolding kulfies:
- Keep the kulfi molds under running tap water for about 40-45 seconds, or
- Dip a kitchen towel in hot water, and slightly squeeze to drain the excess water. Immediately wrap the mold with it for about 15-25 seconds.
- Then gently turn the Popsicle stick, and pull gently to unmold, or invert and tap the molds sharply on the plate.
- Garnish with chopped almonds, pistachios. Serve immediately or let it stand for about 2-3 minutes to make the kulfi slightly creamy.
Yield: Makes about 12-14 kulfies.
