Ingredients:
- All-purpose flour - 2 cup
- Corn Flour - ¼ cup
- Baking powder - ½ Teaspoon
- Salt - ½ Teaspoon
- Unsalted butter, melted- 1 cup / 2 sticks
- Granulated Sugar - 1 ¼ - 1 ½ cup
- Egg - 1 large
- Vanilla Extract - 1 Teaspoon
- Lemon Juice - 1 Tablespoon
- Lemon zest - 2 Tablespoon
For Sugar-lemon Mix:
- Granulated sugar - 4-5 Tablespoon
- Lemon zest - 1 Tablespoon
Instructions:
- Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
- In a small bowl, mix together the ingredients mentioned in 'For Sugar-lemon Mix' and set aside.
- In a bowl, mix together all-purpose flour, corn flour, baking powder, salt and set aside.
- In a mixing bowl, beat together butter and sugar until light and creamy for about 3-4 minutes.
- Now add in the egg and combine well. Add in the flour mixture, vanilla extract, lemon zest and lemon juice.
- Mix well and make a smooth dough. Let it sit for 5 minutes.
- Then divide the dough into 24 equal sized balls. Roll each ball into the sugar-lemon mixture and make sure the dough balls are coated well.
- Arrange the sugar coated balls onto the prepared baking sheet, leave two inches among the cookies.
- Bake for about 10-14 minutes. Remove from oven, let it cool in the baking sheet for 5 minutes.
- Then transfer to a wire rack and cool completely. Enjoy.
Yield: Makes about 24 cookies.
