Lemon Sugar Cookies
Ingredients:
  • All-purpose flour - 2 cup
  • Corn Flour - ¼ cup
  • Baking powder - ½ Teaspoon
  • Salt - ½ Teaspoon
  • Unsalted butter, melted- 1 cup / 2 sticks
  • Granulated Sugar - 1 ¼ - 1 ½ cup
  • Egg - 1 large
  • Vanilla Extract - 1 Teaspoon
  • Lemon Juice - 1 Tablespoon
  • Lemon zest - 2 Tablespoon

For Sugar-lemon Mix:

  • Granulated sugar - 4-5 Tablespoon
  • Lemon zest - 1 Tablespoon
Instructions:
  1. Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
  2. In a small bowl, mix together the ingredients mentioned in 'For Sugar-lemon Mix' and set aside.
  3. In a bowl, mix together all-purpose flour, corn flour, baking powder, salt and set aside.
  4. In a mixing bowl, beat together butter and sugar until light and creamy for about 3-4 minutes.
  5. Now add in the egg and combine well. Add in the flour mixture, vanilla extract, lemon zest and lemon juice.
  6. Mix well and make a smooth dough. Let it sit for 5 minutes.
  7. Then divide the dough into 24 equal sized balls. Roll each ball into the sugar-lemon mixture and make sure the dough balls are coated well.
  8. Arrange the sugar coated balls onto the prepared baking sheet, leave two inches among the cookies.
  9. Bake for about 10-14 minutes. Remove from oven, let it cool in the baking sheet for 5 minutes.
  10. Then transfer to a wire rack and cool completely. Enjoy.

Yield: Makes about 24 cookies.
