Ingredients:
- Mushroom - 200 Gms
- Onion - 1 medium, 100 Gms
- Green Chilli - 2 Numbers, chopped
- Curry leaves - 1 sprig
- Grated Coconut - 1 cup
- Pepper powder - ½ - ¾ Teaspoon
- Mustard seeds - ½ Teaspoon
- Coconut oil - 1 Tablespoon
- Salt to taste
Instructions:
- Clean and wash the mushrooms. Then wipe them with a clean cloth.
- Slice the mushrooms and onions into thin pieces. Then cut them into 1 cm pieces.
- Take the mushroom pieces, onion pieces, chopped green chilli, grated coconut, curry leaves, pepper powder and salt in a large bowl.
- Gently squeeze and combine everything well using your hands. Set aside.
- Heat coconut oil in a pan, splutter mustard seeds.
- Lower the heat, add in the mushroom mixture and mix well.
- Bring everything to the center of the pan and pat down the mixture tightly using the back of a spoon.
- Cover and cook for 8-12 minutes on very low heat. In between, stir 2-3 times to make sure that the bottom is not getting burned. Adjust salt, if required.
- Once the mushroom thoran is cooked well, remove the lid and stir fry for another 2-4 minutes on low-medium heat.
- Serve hot with rice.
