Kerala style Mushroom Thoran

   Happy Diwali   

Ingredients:
  • Mushroom - 200 Gms
  • Onion - 1 medium, 100 Gms
  • Green Chilli - 2 Numbers, chopped
  • Curry leaves - 1 sprig
  • Grated Coconut - 1 cup
  • Pepper powder - ½ - ¾ Teaspoon
  • Mustard seeds - ½ Teaspoon
  • Coconut oil - 1 Tablespoon
  • Salt to taste
Instructions:
  1. Clean and wash the mushrooms. Then wipe them with a clean cloth.
  2. Slice the mushrooms and onions into thin pieces. Then cut them into 1 cm pieces.
  3. Take the mushroom pieces, onion pieces, chopped green chilli, grated coconut, curry leaves, pepper powder and salt in a large bowl.
  4. Gently squeeze and combine everything well using your hands. Set aside.
  5. Heat coconut oil in a pan, splutter mustard seeds.
  6. Lower the heat, add in the mushroom mixture and mix well.
  7. Bring everything to the center of the pan and pat down the mixture tightly using the back of a spoon.
  8. Cover and cook for 8-12 minutes on very low heat. In between, stir 2-3 times to make sure that the bottom is not getting burned. Adjust salt, if required.
  9. Once the mushroom thoran is cooked well, remove the lid and stir fry for another 2-4 minutes on low-medium heat.
  10. Serve hot with rice.
