Ingredients:
- Thinly sliced Kovakka, Ivy Gourd - 5 cup
- Onion, thinly sliced - 1 ½ cup
- Green chillies - 2-3 Nos, slit
- Coconut slices, bite sized - ¼ cup
- Curry leaves - 1-2 sprig
- Chili powder - 1 - 1 ½ Teaspoon, adjust according to your taste
- Turmeric powder - ½ Teaspoon
- Coconut oil - 3-4 Tablespoon
- Salt to taste
Instructions:
- In a large bowl, add in the sliced ivy gourd, onion, green chillies, curry leaves, turmeric powder, chilli powder, salt and mix well.
- Heat 2 tablespoon of coconut oil in a pan, add in the coconut pieces and try until slightly golden on medium heat.
- Then add in the ivy gourd mixture prepared in step #1 and mix well.
- Cover and cook until the ivy gourd pieces are ¾ done. Stirring 3-4 times in between.
- Then remove the lid, sprinkle 1-2 tablespoons of coconut oil, mix well and fry for about 10-15 minutes on low-medium heat. Adjust salt. Stir periodically.
- Serve hot with rice.
