Ingredients:
- Long grain Basmati Rice - 2 cups
- Ghee or Oil - 2-3 Tablespoon,adjust according to your taste
- Cumin Seeds - 1 ½ - 2 Tablespoon, adjust according to your taste
- Onion, medium sized - 1 Nos, thinly sliced
- Water - 3 ¼ - 3 ½ cups
- Cashew nuts - 8-12 Nos
- Salt to taste
Instructions:
- Wash and soak basmati rice in water for 20 minutes and drain the water completely. Set aside.
- Heat the ghee or oil in a deep pan, add in the cashew nuts and stir fry until light brown in color. Transfer to a paper towel.
- Then add cumin seeds into the same pan and saute for few seconds.
- Add in the sliced onion and saute until it turns light brown.
- Add in the drained rice and saute for 5-7 minutes on medium heat.
- Add in the water, salt and cook over medium flame until the water starts boiling.
- Once the water starts boiling, set heat to the lowest setting; Cover the pan with a lid and cook for 20-25 minutes on low heat.
- Remove from heat and let it stand for 5-8 minutes.
- Open the lid, gently mix the rice; Garnish with fried cashew nuts and serve hot.
