Ingredients:
- Full Chicken - 1 ½ Kg, cut into two portions
For Marinade:
- Coriander Leaves - 1 ½ cup, approx: 50 Gms
- Mint Leaves - ½ cup, approx: 15 Gms
- Curry Leaves - 1-2 sprig
- Spring Onions, Scallions - 3-4 Nos
- Garlic - 12-15 cloves, approx: 60 Gms
- Ginger - 2 inch pieces, chopped, approx: 30 Gms
- Green Chillies - 8-12 Nos, approx: 25-30 Gms, adjust according to your spice level
- Cumin Powder - ½ Teaspoon
- Garam masala Powder - 1 Teaspoon
- Black Pepper powder - 1 Teaspoon
- Yogurt - 2 Tablespoon
- Lemon Juice - 1 Tablespoon
- Salt to taste
Instructions:
Initial Preparation:
- Clean and wash the chicken thoroughly. Pat dry the chicken with a kitchen paper towel.
- Make deep incisions all over the chicken. Set aside.
- Grind together the ingredients mentioned in 'For Marinade' and make a fine paste.
- Rub this marinade all over the chicken pieces and refrigerate overnight or at-least 4-5 hours.
- Take out the chicken from the refrigerator at least 1 hour before cooking.
Grilling in a Charcoal Grill:
- Let the charcoal burn until they're covered with white-gray ash.
- Position the grill rack 5 inches from the coals.
- Arrange chicken in a grill basket and place it over the grill rack.
- Now grill the chicken with the vents open, covered, flipping 3-4 times to both sides, for about 40-50 minutes or until cooked through. Don't forget to baste the chicken with melted butter in between.
Broiling in an oven:
- Preheat the broiler.
- Arrange the marinated chicken in a baking tray.
- Place the tray under the broiler, about 6 inches away from the heat source.
- Broil for 30 minutes, then take out the tray carefully and turn the chicken to the other side. Don't forget to baste the chicken with melted butter.
- Return to oven and broil for another 15-20 minutes or until cooked through.
- Remove from heat, serve hot with Khuboos(Pita bread), mayonnaise etc.
