Grandma’s special Kerala style Homemade Garam Masala
Ingredients:
  • Fennel Seeds - 1 cup / 100 Gms
  • Green Cardamom - ¼ cup / 40 Gms
  • Cloves - 2 Tablespoon / 20 Gms
  • Black pepper corns - 1 Tablespoon / 10 Gms
  • Star Anise - 8 Nos / 15 Gms
  • Cinnamon sticks, 1 inch pieces - 6 Nos, cut into small pieces
  • Mace - 2 Nos
  • ** Gram measurements are in approx: value.
Instructions:
  1. Heat a heavy bottomed pan on medium heat.
  2. Once the pan is hot, add in all the whole spices and dry roast for 4-6 minutes by stirring continuously on medium heat.
  3. Remove from heat, and transfer the roasted spices immediately to a plate and allow to cool slightly.
  4. Then grind it to a coarse or fine powder. I normally prefer a slightly coarse powder.
  5. Allow to cool completely and store it in a dry airtight container.

Yield: Makes about 1 ½ cup( approx: ) of garam masala.
