Ingredients:
- Fennel Seeds - 1 cup / 100 Gms
- Green Cardamom - ¼ cup / 40 Gms
- Cloves - 2 Tablespoon / 20 Gms
- Black pepper corns - 1 Tablespoon / 10 Gms
- Star Anise - 8 Nos / 15 Gms
- Cinnamon sticks, 1 inch pieces - 6 Nos, cut into small pieces
- Mace - 2 Nos
- ** Gram measurements are in approx: value.
Instructions:
- Heat a heavy bottomed pan on medium heat.
- Once the pan is hot, add in all the whole spices and dry roast for 4-6 minutes by stirring continuously on medium heat.
- Remove from heat, and transfer the roasted spices immediately to a plate and allow to cool slightly.
- Then grind it to a coarse or fine powder. I normally prefer a slightly coarse powder.
- Allow to cool completely and store it in a dry airtight container.
Yield: Makes about 1 ½ cup( approx: ) of garam masala.
