Ingredients:
- Cauliflower - 1 medium sized, cut into small florets
- Vegetable Oil to deep fry
For Cooking Cauliflower:
- Turmeric powder - ¼ Teaspoon
- Water - 2 cups
- Salt as required
For the batter:
- All purpose flour - 6 Tablespoon
- Cornflour - 3 Tablespoon
- Ginger-garlic paste - 2 Teaspoon
- Kashmiri red chilli powder - ½ Teaspoon
- Pepper powder - ¼ Teaspoon
- Water as required
- Salt to taste
For Sauce:
- Thinly sliced Garlic - 1 ½ Tablespoon
- Onion, medium sized - 1 Nos, finely chopped
- Capsicum,chopped - ¼ cup
- Chopped spring onion whites - 1 Teaspoon
- Chopped spring onion greens - 1 Tablespoon
- Sweet Red Chilli sauce - 2 Tablespoon
- Soy sauce - 1 Tablespoon
- Tomato Ketchup - 1 Tablespoon
- Vinegar - 1 Teaspoon
- Sugar- ½ Teaspoon
- Vegetable Oil - 2 Tablespoon
- Salt to to taste
For Corn Starch water:
- Corn Starch - 2 Teaspoon
- Water - ½ - 1 cup of water, approx:
Instructions:
Initial Preparation:
- Take 2 cups of water, ¼ teaspoon turmeric powder, little salt in a sauce pan and bring to a boil.
- Add in the cauliflower florets and cook for 4-6 minutes, then drain the water completely. Set aside
- Heat enough oil to fry the cauliflower florets in a frying pan over medium high heat.
- Mix together the ingredients listed under 'For the batter' in a bowl, and make a thick batter.
- Dip the cauliflower florets one at a time into the batter and slowly drop it into the hot oil. Fry the florets in small batches. Do not overcrowd.
- Deep fry until golden brown. Take them out and transfer to a paper towel.
Gobi Manchurian Preparation:
- Mix 2 teaspoon of corn starch in ½ cup of water and set aside. Use can use 1 ½ tablespoons of the remaining batter(Initial Preparation Step #4) instead.
- Heat 2 tablespoons of oil in a heavy bottomed pan, add in the sliced garlic, chopped spring onion whites and saute for 2 minutes.
- Then add in the chopped onion and saute until translucent.
- Then add in the chopped capsicum and saute for 1 minute.
- Add in the red chilli sauce, soy sauce and saute for a minute in high heat.
- Lower the heat, add in tomato ketchup, vinegar, sugar, salt and corn starch mix. Adjust water. Mix well and let it boil on low heat.
- Now add in the fried florets and mix well.
- Garnish with spring onion greens and serve hot.
