Eggnog-Orange Cake with Orange Glaze
Ingredients:

For Cake:

  • All-purpose flour - 3 cups
  • Baking Powder - 3 Teaspoon
  • Cinnamon Powder - ½ Teaspoon
  • Nutmeg Powder - ¼ Teaspoon
  • Salt - 1 Teaspoon
  • Unsalted Butter - 1 cup, room temperature
  • Sugar - 2 cup
  • Eggs - 4 large, room temperature
  • Vanilla Essence - 1 Teaspoon
  • Eggnog - 1 ¼ cup
  • Fresh Orange Juice - ¼ cup
  • Orange Zest - 1 ½ Tablespoon

For Orange Glaze:

  • Powdered Sugar - ¾ cup
  • Orange Juice - 1 ½ Tablespoon
  • Cinnamon Powder - ⅛ Teaspoon, optional
Instructions:

Initial Preparation:

  1. Preheat oven to 350°F.
  2. Grease a 13 X 9 baking pan and line with parchment paper, set aside.
  3. In a large bowl, sift together the flour, baking powder, cinnamon powder, nutmeg powder, salt. Set aside.

Cake Batter Preparation:

  1. In a large mixing bowl, beat butter until creamy and smooth.
  2. Add in the sugar and beat on medium speed, for about 2-3 minutes.
  3. Add in eggs, one at a time, and beat on medium speed until well incorporated after each addition.
  4. Combine the Vanilla essence.
  5. Mixing in the dry ingredients mixture and Eggnog alternately. Add them in two or three additions, beginning and ending with the dry ingredients. Beat well after each addition, but only until just combined. Do not over-mix.
  6. Wipe down the sides of the bowl occasionally using a spatula.
  7. Add in the orange juice, orange zest and beat until just incorporated on low speed.
  8. Now transfer the batter into the prepared baking tray and level the top. Tap the tray few times, to release the air bubbles.
  9. Bake until an wooden skewer inserted into the cake comes out clean, for about 35-45 minutes.
  10. Remove from oven and let it rest for 10 minutes. Then transfer the cake to a wire-rack and cool completely.

Orange Glaze Preparation:

  1. Add the ingredients mentioned in 'For Orange Glaze' in a bowl and mix well. You can easily double the glaze recipe, if you need more glaze.
  2. Once the cake has cooled completely, drizzle the glaze on top and let it sit for 15-20 minutes to set.
  3. Slice the cake and serve. Enjoy :)
