Ingredients:
- Egg - 2 Nos, beaten
- Peanut - ¾ cup, without skin
- Chopped onion - 1 cup
- Green Chillies - 3-4 Nos, chopped
- Turmeric powder - ½ Teaspoon
- Pepper powder - 1 ½ Tablespoon
- Mustard seeds - ½ Teaspoon
- Curry leaves - 2 sprig
- Coconut oil - 3 Tablespoon
- Salt as required
For Coconut Masala:
- Grated coconut - ½ cup
- Garlic - 2 cloves
- Shallots - 3-4 Nos
Instructions:
- Coarsely grind together the grated coconut, garlic, shallots and set aside.
- Heat oil in a heavy bottomed pan and splutter mustard seeds.
- Then add in the chopped onion, chopped green chillies, curry leaves and saute until the onion turns to light brown color.
- Add in the turmeric powder and saute for 1 minute on low heat.
- Add in the prepared coconut masala. Mix well and saute for 2-3 minutes over low flame.
- Now add in the beaten eggs. Combine well and saute until the eggs are scrambled well.
- Then add in the peanuts, pepper powder, salt and stir continuously for 3-4 minutes on low flame.
- Serve hot.
