   Happy Diwali   

Ingredients:
  • Egg - 2 Nos, beaten
  • Peanut - ¾ cup, without skin
  • Chopped onion - 1 cup
  • Green Chillies - 3-4 Nos, chopped
  • Turmeric powder - ½ Teaspoon
  • Pepper powder - 1 ½ Tablespoon
  • Mustard seeds - ½ Teaspoon
  • Curry leaves - 2 sprig
  • Coconut oil - 3 Tablespoon
  • Salt as required

For Coconut Masala:

  • Grated coconut - ½ cup
  • Garlic - 2 cloves
  • Shallots - 3-4 Nos
Instructions:
  1. Coarsely grind together the grated coconut, garlic, shallots and set aside.
  2. Heat oil in a heavy bottomed pan and splutter mustard seeds.
  3. Then add in the chopped onion, chopped green chillies, curry leaves and saute until the onion turns to light brown color.
  4. Add in the turmeric powder and saute for 1 minute on low heat.
  5. Add in the prepared coconut masala. Mix well and saute for 2-3 minutes over low flame.
  6. Now add in the beaten eggs. Combine well and saute until the eggs are scrambled well.
  7. Then add in the peanuts, pepper powder, salt and stir continuously for 3-4 minutes on low flame.
  8. Serve hot.
