Ingredients:
- Bread - 6 - 8 slices
- Butter to toast the bread slices
For filling:
- Hard Boiled Eggs - 3 large, roughly chopped
- Mayonnaise - 2-3 Tablespoon
- Cream Cheese - 1-2 Tablespoon, optional
- Onion - 1 small sized, chopped
- Tomato - 1 medium sized, chopped
- Spring onion whites, chopped - 2 Tablespoon
- Spring onion greens, chopped - 3 Tablespoon
- Pepper powder - 1 Teaspoon, adjust according to your taste
- Red chilli flakes - 1 -2 Teaspoon
- Cumin powder - ¼ Teaspoon
- Salt to taste
Instructions:
Initial Preparation:
- Hard boil the eggs, peel off the shell, roughly chop into small pieces and set aside. See notes for more details.
- Make your own mayonnaise, by using our Home made mayonnaise recipe. Set aside.
- Chop the veggies and set aside.
Sandwich Preparation:
- In a bowl, add in the ingredients mentioned in 'For filling' and mix well. Refrigerate until ready to assemble the sandwich.
- Apply butter generously on the bread slices.
- Heat a grill pan, toast the bread slices until grill marks appear on medium heat.
- Take one slice of toasted bread, place generous amount of prepared egg salad.
- Cover it with another toasted bread slice and gently press down.
- Then diagonally cut the sandwiches into triangles and serve immediately.
Notes:
- How to make perfect hard boiled eggs?
- Take enough water in a sauce pan.
- Add little salt, this prevents cracking egg shells while boiling.
- Place the pan over high heat until it reaches a rolling boil, then reduce heat to medium-high.
- Now add in the eggs carefully.
- Boil for 8-9 minutes, then take out the eggs and put them in cold water for 3-5 minutes.
- Carefully crack the eggs shells, and peel.
