Ingredients:
- Drumsticks leaves - 1 cup
- Mustard seeds - ½ Teaspoon
- Coconut Oil - 1-2 Tablespoon
- Curry leaves - 3-4 leaves
- Salt to taste
- Water as required
For coconut paste:
- Grated Coconut - 2 cup
- Red Pearl Onions - 3-4 Nos
- Garlic - 2 cloves
- Cumin seeds - ¼ Teaspoon
- A pinch of Turmeric powder
- Water - ½ - 1 cup
Instructions:
- Clean and wash the drumstick leaves thoroughly and drain the water completely. Set aside.
- Grind together the ingredients mentioned under 'For coconut paste' and make a fine paste.
- Heat coconut oil in a pan, splutter mustard seeds.
- Add in the drumstick leaves, curry leaves and saute until the color of drumstick leaves change to dark green in color on low-medium heat.
- Add in the coconut paste, enough water and salt. Simmer and combine well.
- Continue stirring until the curry is hot on low heat. Once the curry is hot, switch off the flame. Don't allow the curry to boil.
- Serve hot with rice.
