Ingredients:
- Fresh grated coconut - 2 cup
- Corn Flour - 2 Tablespoon
- Sugar - 6 Tablespoon
- Egg white - 1 large
- Vanilla Extract - ½ Teaspoon
- Finely chopped candied red cherries - ¼ cup
- Decorating nonpareils as required
- Red and green sanding sugar as required
Instructions:
- Preheat oven to 350°F; Line baking sheets with parchment paper.
- In a bowl, add in the grated coconut, corn flour, sugar, egg white, vanilla extract, chopped red cherries and mix well.
- Divide the dough into 15 equal sized balls and place each ball in the baking sheet.
- Slightly flatten each ball and make a hole in the center of the cookie.
- Sprinkle the nonpareils, red and green sanding sugar on top.
- Bake for about 22-25 minutes or until the coconut begins to brown.
- Remove from oven, let it cool in the pan for about 5 minutes.
- Then transfer to a wire rack and cool completely.
- Enjoy the coconut wreath macaroons.
