Ingredients:
- Basmathi Rice - 1 cup (for 4 cups of cooked rice, approx:)
- Grated Coconut - 1 - 1 ½ cup, adjust
- Green chillies - 2 Nos, chopped
- Cashew Nuts - 10-15 Nos
- Black gram, Urad Dal - 1 Tablespoon
- Curry leaves - 2 sprigs
- Mustard seeds - ½ Teaspoon
- Coconut Oil - 2 Tablespoon
- Salt to taste
- Water as required
Instructions:
Cooking Rice:
- Wash and soak the rice for 30 minutes. Then drain the water completely and set the rice aside.
- Fill a medium saucepan with enough water, add enough salt, and bring to a boil. Once boiled, add in the soaked rice and cook till the rice is done. Make sure the rice is grainy and not mushy.
- When the rice is cooked, drain the water completely and set the rice aside. Let it cool completely.
Coconut Rice Preparation:
- Heat oil in a big pan and splutter mustard seeds.
- Add in black gram, cashew-nuts and fry until light golden in color.
- Add in the chopped green chillies, curry leaves and fry for 1-2 minutes on medium heat.
- Then add in the grated coconut and fry till the coconut turns light golden in color.
- Now add in the rice as batches and mix well after each addition. Adjust salt.
- Serve hot with veg or non-veg curries.
