Ingredients:
- Chopped Cluster Beans - 3 cup
- Red Pearl Onions - 4-6 Nos, chopped
- Mustard seeds - ½ Teaspoon
- Curry leaves - 1 sprig
- Coconut Oil - 1 Tablespoon
For Coconut masala:
- Fresh grated coconut - ¼ cup
- Turmeric powder- ¼ Teaspoon
- Red Chilli powder- ⅛ Teaspoon
- Garlic - 2 cloves
- Cumin seeds - ½ Teaspoon
- Red Pearl Onion - 1 Nos
- Roasted gram, Pottu kadala - 1 Tablespoon
- Salt to taste
Instructions:
Initial Preparation:
- Cut both the ends of cluster beans. Wash well and chop them into ½ inch pieces. Set aside.
- Place the chopped beans on a steamer. Steam cook until soft and cooked well. Remove from heat and set aside.
- Coarsly grind together the ingredients mentioned in 'For Coconut masala' and set aside.
Cluster Beans Stir Fry Preparation:
- Heat 1 tablespoon of oil in a pan, splutter mustard seeds.
- Add in the chopped pearl onions and curry leaves saute until the onions become translucent.
- Now add in the cooked cluster beans, prepared coconut masala and mix well.
- Bring everything to the center of the pan and pat down the mixture tightly using the back of a spoon.
- Cover and cook for 3-4 minutes on very low heat. Stir occasionally to make sure that the bottom is not getting burned. Adjust salt, if required.
- Remove from heat, and let it sit for about 5 minutes. Serve hot with rice.
