Ingredients:
- Cooked Jasmine rice / Long grain Basmathi Rice - 2 cups
- Eggs - 2 Nos, whisked
- Finely diced Carrots - ½ cup
- Thinly chopped Green beans - ¼ cup
- Sweet corn - ½ cup
- Shallots - 2 Nos, finely sliced
- Garlic - 2 cloves, finely chopped
- Finely sliced spring onion whites - 1 Tablespoon
- Lite/white soy Sauce - 1 ½ Tablespoon
- Dark Soy sauce - 1 Tablespoon
- Kashmiri Red chilli flakes - 1 Teaspoon
- Vegetable Oil - ¼ cup
- Sugar - ½ Teaspoon
- Finely sliced spring onion greens - 1 Tablespoon
- Salt to taste
Instructions:
- Heat oil in a large pan over high heat, add the whisked egg; Stir continuously till the egg is slightly golden on edges; Remove and set aside. Leave remaining oil in pan.
- In the same pan add shallots, garlic, spring onion whites and cook until translucent.
- Add carrot, green beans, sweet corn and sauté for 2-3 minutes until lightly golden.
- Now lower the heat, add the cooked rice and fried egg and mix well.
- Then add sauces, red chilli flakes, sugar and salt; Toss till well combined.
- Garnish with spring onions greens; Serve hot.
